The recipe for mozzarella in carrozza is one of the most symbolic of recycling cuisine.
The bread that was left in the house, the grandmother transformed it into this delicacy!
Historical background:
It seems to be a poor dish born in the nineteenth century in Campania, its name comes from the fact that the mozzarella is enclosed in slices of bread as to form a carriage.
of legends and anecdotes we find many, but basically what matters is that this wonderful recipe has never gone out of fashion.

street food has created from the basic recipe, endless variations of filling... including sweet ones with ricotta and chocolate.
For the filling of 4 mozzarella in carriage
8 slices of gluten-free bread
100 g of cooked ham without gluten
100 g mozzarella for pizza without gluten
500 g of milk
500 g breadcrumbs without gluten
3 whole eggs beaten
1 l oil of mixed seeds
Procedure for the composition:
Remove the outer crust from the bread.
Slice the mozzarella into slices about 1 cm thick to place on a slice of bread together with a slice of cooked ham, close with another slice of bread and keep aside. Do the same process with all the other ingredients. In a bowl open the eggs and beat them vigorously with the tines of a fork, in a separate bowl pour the milk.
In another bowl arrange the breadcrumbs, then take the sandwiches and pass them on both sides in milk, then in the egg and at the end go over well in the breadcrumbs.
Method of firing:
Heat a pan with plenty of oil, at this point put to cook the bread and leave to brown on both sides for a couple of minutes on each side.
At this point serve with salad.
