Celiac disease imposes a type of gluten-free diet as the only cure, so why is the cost of dedicated foods so high?

Across Europe, it appears that the prices of gluten-free products compared to gluten-free products are slightly down, but there are no low-end products. 
The study composed a hypothetical cart in 2017 with the following products : 2 types of bread (rosettes and sliced bread), 3 types of pasta (2 spaghetti, 1 short pasta), biscuits for breakfast, snack cakes type plumcake/ snack, 2 mix flour/ preparations for, frozen pizza and a first course. Every single product indicated in the basket was taken over in GDO, Pharmacy and Specialized Store, for a total of 70 prices found in the Italian Regional Capitals.
The cheapest is the GDO, pharmacies and specialized shops are more expensive, at national level the cost to buy the products of the simulated cart is about 50€ for the specialized store, 48€ in pharmacy and 37€ in GDO. 
As we know, however, the food market, including the gluten-free market, is constantly evolving: as a result of changing consumer needs, not only do they change packaging and available assortment, but they can vary the ingredientistica or the grammatura of the aliments and little by little it is noticed as until today this difference of price is aligning between the various channels, rendering all more accesibile even if still "dear" regarding the traditional product.
In summary, it is more difficult to find low cost products among gluten-free products than among conventional products, net of the quality of products that is always fundamental.

It should be specified, however, that companies are continuously active in research and innovation to be able to create products that are tasty, genuine and equally competitive for the various categories of users, which often add to coeliac disease also other needs (lactose-free, sugar-free, nickel-free) .
There are several factors that influence the final price:
higher cost of raw materials than gluten-free raw materials
prevention of the risks of cross-contamination (these are those contaminations to be eliminated along all stages: from raw materials to delivery to the consumer). So for a manufacturer to prevent contamination, oranizzare the production chain, carry out checks in the various stages up to transport involves a cost that inevitably falls on the price of the consumer.

For this type of products do not apply the classic laws of the market and competition since in part they are used the "vouchers" issued by the state.
