Characteristics: Truffled butter is a refined condiment made by blending high-quality butter with fresh truffles (white or black), or sometimes with truffle flavorings and freeze-dried pieces. It's excellent on pasta, risotto, meats, and crostini. It can be prepared artisanally or commercially, and is used as a substitute for regular butter to enhance the flavor of any recipe, adding a touch of gastronomic luxury.
Notes: Deep in flavor, aromatic, with earthy and umami notes from the mushroom, varying depending on the type of truffle.
There are versions with white truffle (more delicate and expensive), black truffle (more intense), or summer truffle (more balanced).
Ingredients:
500 g Molino dalla Giovanna Special Bread and Pizza
360 g water
25 g fresh yeast
40 g truffled butter
12 g fine salt
Rice and corn flour for dusting
For the topping:
30 g truffled butter
8 g salt
Method
In a bowl or stand mixer, dissolve the fresh yeast in the room-temperature water, pour in the mixture, and knead. Add the softened butter and salt and continue mixing until all the ingredients are well incorporated.
Transfer the dough to two 25 cm diameter round baking pans lined with oiled parchment paper, and spread the dough evenly across the entire pan.
Press with your fingertips to create the classic hollows.
Let rise for about 1 hour at room temperature.
Once the rising time is up, preheat the oven to 250°C (480°F), season the surface with coarse salt, and bake for about 15 minutes at 200°C (400°F). Remove the focaccia, arrange the truffle butter curls on top, and return to the oven for another 10 minutes.
Remove the pan once cooked and let it cool completely.
