The delicious cake that I present today contains an ingredient that I love: white chocolate.
The basic ingredients of white chocolate are sugar, food cocoa butter, milk, soy lectin and flavorings. It is not exactly chocolate because cocoa solids and cocoa powder are absent.
But it is great for those who suffer from eating disorders related to stress: a white chocolate dessert, in addition to being really tasty, has an intense flavor.
It is rich in antioxidants, it also helps to restore the flexibility of the arteries, it is rich in calcium and vitamins B2 and B3, substances that are good for our body and are particularly important especially during the growth phase.

White chocolate was born in Switzerland immediately after the First World War, so as not to waste the excess of cocoa butter resulting from the production of chocolate. It began to be distributed in 1930 in the form of a candy that in a short time will become the famous bar.
The quality of white chocolate is given by the amount of cocoa butter used, the main source of fat. It is advisable to always carefully observe the ingredients of white chocolate and the nutrition label to ensure that it does not contain chemically treated fats.
Ingredients for 4 people
3 whole eggs
120 g granulated sugar
140 g butter from centrifuge
150 g white chocolate
110 g Impalpable rice flour
1 vanilla bean
the peel of ½ lemon or grated orange
Gluten-free powdered sugar for dusting
Chop the white chocolate on a cutting board and melt in a bain-marie with the butter, stirring often and gently.
Place the eggs and sugar in the bowl of a planetarium or in a glass bowl, work with electric whisks until foamy.
After about 5 minutes, slowly add the rice flour, and allow to incorporate without stopping the mixer whips.
When it is well blended, add the melted chocolate previously and cooled, complete by adding the pulp of the vanilla berry and the grated lemon peel.
Butter and flour a rectangular mold and pour the mixture inside.
Preheat the oven 180 and when it is hot put to bake the cake for about 30 minutes. Remove from the oven and wait for it to cool completely before turning it out. Sprinkle with icing sugar and serve.
