Procedure
Wash, peel the apples and remove the core. Cut each apple into 8 cloves.
Pour the sugar, butter, rum and cinnamon into a large pan. Melt everything over moderate heat, add the apples cut into wedges and cook for a few minutes.
Butter and flour a cake pan with a diameter of 22 cm, arrange the apple slices in the same direction, overlapping them slightly and pour over the cooking liquid.
We prepare the dough:
Divide the eggs by putting in one bowl the egg whites and in another the egg yolks, add the sugar to the last and whip well with electric whips.
As soon as the yolks are well cleared then the sugar will be well dissolved, wash the whips and add to the egg whites a pinch of salt until fine and whipped.
Add the yolk mix, yeast, lemon zest, melted butter and start mixing slowly until you get a creamy and homogeneous dough.
Pour the dough into the mold, level it and bake in a hot oven at 180° for 30/35 minutes, to check that it is cooked put a toothpick in the middle of the cake and make sure it is dry.
After the cooking time remove the cake from the oven and let it cool a few minutes before sprinkling with icing sugar and serve
