Today I prepare a breakfast that makes my children gloat, but also adults love it: pancakes.
There are many versions, flavored with citrus, cinnamon, coffee, cocoa, we will prepare them simple with honey and strawberries.
Features:
Strawberries are a red fruit with a very sweet taste and scent.
Characterized by a concentrate of micronutrients useful for health, such as numerous antioxidants such as anthocyanins and ellargic acid.
They contain minerals such as manganese and potassium, vitamin C and B9.
Historical background:
Strawberries are the fruit of the strawberry plant, which originated in Europe in the IVIII century and belongs to the genus Fragaria and the family of Rosaceae.
Although in recent years, we find availability in every month of the year of strawberries, it is recommended to consume them "in season" starting from March until July.
Notes:
Strawberries are wrongly called "fruit". In reality, they represent only the edible part of the strawberry plant, the fruit is represented by the achenes, that is the small yellow seeds present on the surface.
Their consumption improves blood glucose and fat levels.

Ingredients for 8 people
2 whole eggs
250 g lactose-free milk <0.01%
150 g fine rice flour
10 g baking powder allowed
100 g sunflower seed oil
40 g sugar
Margarine to grease the pan
For the dressing of the pan cake
100 g of acacia honey
200 g fresh strawberries

 

Proceeding
Shell the eggs in a bowl and whisk until foamy, then add the oil and milk, continuing to mix with a whisk. Mount the mixture until it is clear.
Add the yeast to the flour and sift everything in the bowl with the egg mixture, mix with a whisk to mix.
At this stage it is essential to be careful and not to create lumps, then add sugar.
Heat a large non-stick frying pan on a medium heat (preferably thick) and, if necessary, grease with a little margarine to spread on the surface with the help of kitchen paper. Pour in the center of the pan a ladle of preparation, there will be no need to spread it.
When bubbles begin to appear on the surface and the base will be golden, turn it on the other side with a spatula, then brown the other side, after which the pancake will be ready. Continue with the rest of the dough and gradually arrange the pancakes on a serving plate, Filling them one above the other.
Wash the strawberries and cut into cubes, complete with two tablespoons of honey and a handful of strawberries and serve.
