Alternative meatballs for those who do not like meat, so we prepare them with tofu. Very particular taste and accompanied by sweet and sour sauce to stimulate the taste buds with more intense flavors.
Ownership
Tofu is a product obtained by curdling soy milk and pressing the result in blocks with dedicated tools, often in bamboo, or with classic shapes and baskets dedicated to the production of cheeses. Since the production of tofu from soy milk is similar to that of cheese from cow’s milk, tofu is often also referred to as "vegetable cheese". 
Historical background
It is assumed that this product already existed in the second century A.D. although in a different form from the current one. It seems to have coincidences with the historical spread of Buddhism, it has then spread to almost all the Far East 
Notes
There are two versions:
dry tofu, in bricks in its storage water
velvety tofu, with a soft texture, very mobido pudding
Ingredients 
250 gr Tofu without gluten 
20 g gluten-free fine rice flour
1 spring onion
1 clove of garlic
2 egg yolks
3 g Salt
1 g Ground black pepper 
1 g sweet paprika
1 l sunflower oil for frying
Gluten-free breadcrumbs and fine corn flour for breading
For the sweet and sour sauce
150 ml of water
100 ml of white wine vinegar
120 g of cane sugar
one tablespoon of double tomato sauce concentrate
3 tablespoons of soy sauce
salt

Procedure:
In a bowl mash the tofu with the help of a fork, until it is crumbly.
Clean the spring onion and cut into joulienne, then peel the garlic, remove the core and finely chop, then add to the tofu. With the tines of a fork mix and add the egg yolks, salt and pepper.
