The dough is made by layering a pre-printed with fat (margarine or butter) to form a thin sheet that, Once cooked, it generates the formation of vapor pockets that separate the dough into several layers giving just the visual sensation of wrinkled sheets of a book.
historical notes:
The recipe has origins in France, for some, presumably in 1645 at the hands of an apprentice pastry chef named Claudius Gele, whose sick father could only eat a prescribed diet consisting of water, flour and butter. For other sources, however, the recipe was created by Marie-Antoine Carême. It was Carême, the cook of kings and the king of cooks, who established the 5-turn method that is still in use today.
notes:
The processing of puff pastry is very long and requires great attention in manipulating the ingredients so that the air can be incorporated between the various layers of dough and butter, and then dilate during cooking with a process called "physical leavening".

Ingredients for 4 people
250 g gluten-free puff pastry allowed
4 whole eggs
50 g grated parmesan cheese
40 g milk
2 zucchini
200 g pillow
100 g asiago
150 g cherry tomatoes
salt up
ground black pepper

Take the zucchini and slice them into thin slices, heat a pan over high heat with two tablespoons of oil, as soon as it is hot pour the zucchini and cook.
Season with salt and cook for one more minute and drain from the cooking oil.
Break the eggs into a bowl, with the tines of a fork beat everything well, add the cheese, milk, salt and a pinch of black pepper, beat again vigorously and set aside.
Take the dough and place in a baking dish. Add the egg mixture to the centre of the dough, heat the oven to 200 ºC and when it is at a temperature, bake for about 12 minutes.
In the meantime, cut the pillow into very thin strips and put to sear in a non-stick pan. After a few minutes, the pillow will start to release the fat and when it is crisp drain from the cooking fat.
At the end of the first cooking of the dough, pour the zucchini and the pillow, cut the tomatoes in half and place them at the edges of the dough, slice the asiago into cubes and add it to the savory cake.
Finish cooking in the oven for another 8/10 minutes, remove from the oven and let cool a few moments before cutting the dough and serving.
