Summer is all about lunches with friends and trips out, so why not make these delicious, crunchy rolls? Their unique color and the properties of poppy seeds make them unique.
Characteristics: Poppy seeds are an excellent source of minerals, including iron, copper, manganese, calcium, and zinc, as well as phytosterols, which help lower "bad" cholesterol levels.
They have a calming effect on the nervous system and are therefore an effective natural remedy for anxiety, stress, and insomnia. They contain a high amount of vitamin E and B vitamins, which boost metabolism and slow cellular aging.
History: Poppy seeds are native to the mountains of Asia and throughout the Middle East and have been cultivated since ancient times for their narcotic and medicinal properties.
The Romans considered poppy seeds to be powerful aphrodisiacs, and in fact, they were added to a drink served to newlyweds before their honeymoon.
Note: The largest producers of poppy seeds in the world are the Czech Republic and Turkey.
Ingredients for approximately 1 kg of dough
500 g Molino dalla Giovanna Special Bread and Pizza
1 sachet of saffron
20 g poppy seeds
5 g granulated sugar
10 g white wine vinegar
370 g water
18 g fresh brewer's yeast
50 g extra virgin olive oil
5 g salt
Rice and corn flour permitted
Method
In a bowl or a stand mixer, combine the water, sugar, saffron, and yeast and mix well until completely dissolved.
Pour the mixture into the stand mixer and mix vigorously.
After a few minutes, add the vinegar, then the oil, then add the salt and continue kneading until all the ingredients are fully incorporated.
Transfer the dough to a floured surface and knead until smooth and even. Divide the dough into 60g loaves and shape them into balls.
Wet the surface with water and coat them in poppy seeds. Let them rise on a baking sheet lined with parchment paper for about 1 hour in a draft-free place, until the dough has roughly doubled in size.
After the required time has elapsed, preheat the oven to 250°C (480°F). Once it reaches temperature, bake the rolls at 180°C (350°F) for about 20-25 minutes.
Once cooked, remove the bread from the oven and let it cool for about 20 minutes on a raised rack.
