Ingredients for 1 kg of bread
400 g gluten-free mix
70 g gluten-free rice flour
30 g fine gluten-free corn flour
370 g of water
15 g brewer's yeast
12 g honey
80 g shelled walnuts
15 extra virgin olive oil
5 g salt up
Extra virgin olive oil

Method
Pour the flour into a bowl and mix well, dissolve the yeast with your hands in the water and knead well with your hands, add honey and walnuts and continue to knead, finish the preparation with oil and salt, to form a loaf smooth and homogeneous, left to rise, wetting the surface of the dough for about 1 to 15 minutes.

After the remodeling time, mix the preparation with the mixture, form small loaves of 40-60 g each, put to rise again for 30 minutes, brush the loaves with oil, heat the oven to 180 ° and cook for about 20 minutes.

Remove from the oven and let it cool on a raised grill before serving.
