Ingredients for 4 people
2 burgers Piaceri Medietrranei panini without gluten
1 black aubergine
50 g grated pecorino cheese
300 g whole milk
20 g butter
10 g gluten-free corn starch
2 red Tropea onions
Brown sugar
60 g Extra virgin olive oil
20 g of water
Fine salt
White wine vinegar
black pepper
Sesame seeds
Method
Wash and dry the aubergine, then cut into slices about 1 cm thick and grill them on the special plate. Once cooked, place the slices in a bowl and season with oil, salt and vinegar and leave to flavor.
Take the onions, clean them from the peel, the skin and remove the ends. Wash and cut into thin slices in a large pot with sugar and a glass of water. Turn on the heat and stir so as to mix all the ingredients and melt the sugar. Cook for about 15 minutes making sure that the onions do not flake, but that they are well caramelized and the liquid almost all dried.
Meanwhile heat the milk in a saucepan, in a bowl put the butter and melt in a micrond, add to the butter the starch and mix everything with a whisk, add all to milk and continue to mix with a whisk until when it will not be sufficiently dense.
At this point add the pecorino cheese with milk, stir over low heat, pepper and thicken.
In a boull pour the oil and water and with a whisk start to beat everything until it is sufficiently thick, add salt and pepper.
Take the panini brush with oil and beat the top of the sandwich into sesame seeds, heat the oven to 170 degrees and cook the bread in the oven for about 5 minutes until the seeds are well attached.
After the preparation of all the ingredients, go to the composition of the sandwiches by cutting them in half horizontally and stuffed in layers alternating with pecorino sauce, aubergines and onion.
