Ingredients for 10 servings
100 g of butter
170 g Special for waffles and pancakes Molino dalla Giovanna
a pinch of the salt
3 eggs
one sachet of vanillin
80 grams of sugar
The peel of a grated lemon

Time: 30 minutes
Difficulty level: average

Preparation:
Beat the egg yolks with half the sugar using an electric whisk for about 3 minutes.  Add the vanilla, the mix and the grated lemon and continue to whip with the electric whisks and the butter softened in the microwave or in a pot. Beat all the ingredients well until they are smooth and frothy.
Beat the egg whites in a separate bowl with a pinch of salt and the remaining sugar.
Incorporate the egg whites to the mixture using a spatula, stirred from the bottom to the top so as not to disassemble the dough.
Butter the waffle plate with softened butter and turn on, when it reaches the temperature and the light goes out, pour over a ladle of dough and close the plates and cook for 5/6 minutes.
Detach the waffle from the plate by helping yourself with a spatula and put on a grate to cool.
