Ingredients for the pancake
250 g Mix Nutrifree Bread
180 g water at room temperature
12 g of fresh yeast
10 g of rice syrup
50 g sunflower seed oil
4 g of fine salt
20 g pitted plums
Rice flour and maize allowed for dusting
Gold plating: dark brown
Time: 2 hours and 21 minutes
Place the water, milk and crumbled yeast and rice syrup into the PAGNOTTA container, select the program 2, the dark browning and press the START button, let mix 3 minutes all the ingredients, at this point add the mix, the oil and the salt, when everything is incorporated and the mixture is compact and homogeneous.
After 1 hour and 16 minutes at the machine signal (10 BIP), transfer the dough onto a pastry board floured with rice flour, divide the dough into two parts, nozzle your hands with the oil and crush on the mould to cover the whole shape, on the surface lay the plums and goji berries dividing them into equal parts.
Allow the two crushed pieces to stand for about 45 minutes in the moulds.
Place the holder in the bread machine at the end of the rest and press the MENU button.
At the end of the program, remove the dunks from the machine within a few seconds and place them on a raised grill, leave to cool for at least half an hour before tasting.
