Fresh gluten-free spaghetti on the guitar with hake and bread crumbs flavored with marjoram

Ingredients for 4 people
300 g Special for pasta Molino dalla Giovanna
1 whole eggs 1 whole eggs
3 egg yolks
4 g of fine salt
300 g of hake
30 g anchovies in oil
60 g gluten-free breadcrumbs
20 g sultanas and raisins
20 g pine nuts 
100 g peeled tomatoes
Extra virgin olive oil
80 g Water

Procedure

Prepare the dough. Pour the mix into a bowl and add the whole eggs, a pinch of fine salt, l’water and mix everything; you get a. Granular dough, cover with a kitchen towel moistened with water and let the dough rest in the refrigerator for 40 minutes.

Whip the press with the special accessory of the spaghetti, pour a little 'd' of dough at a time, form the spaghetti and transfer on a tray floured with rice flour and let dry for 30 minutes.

Soak the raisins for about ten minutes.

Slice an onion as finely as possible until you have a mush, pour into a frying pan together with the extra virgin olive oil and anchovies.

Cook for about ten minutes on a low heat and stir often, so that the bottom withers without burning it and dissolve the anchovies.

Meanwhile dilute the saffron in the water with a fork and then pour into the pan, adding the clean hake and cut into pieces.

Then drain and rinse the raisins and pour into the pan, add the pine nuts, stir and continue cooking, still on a low heat, for another 10 minutes.

At this point add the peeled tomatoes, crushed by hand and cook for about 10 minutes over a gentle flame.

Put a pot on the stove with some water and bring to the boil, adjust with coarse salt and cook the spaghetti for about 3 minutes, Drain in the hake sauce and leave to stir gently for a couple more minutes.

Toast the breadcrumbs in a pan with 10 g of oil, stirring often with a spoon so as not to burn it and when it is golden turn off the flame.

Serve and finish seasoning with toasted breadcrumbs and garnish with a sprig of marjoram and a drizzle of olive oil.
