Ingredients for 4 people

250 g Special fresh pasta Molino dalla Giovanna
2 whole eggs
1 egg yolk
3 g salt up
Very fine rice flour for dusting

For the bacon and pepper sauce

1 red pepper cut into cubes
200 g sweet diced bacon
1 chopped shallot
Extra virgin olive oil
250 ml of fresh cream
1 sprig of rosemary

Proceeding

Insert the stainless steel blade into the Cuko pro XL, add the dough mix, the eggs the salt and set the vel.8 for 5 min.
At the end you will have formed a grainy dough, extract from the bowl and pour on a wooden board dusted with rice flour, knead to form a smooth and homogeneous ball, refrigerate for at least an hour.
In the bowl of the Cuko Pro XL pour two tablespoons of oil, insert the mixing paddle and set the temperature to 100 and C vel.3 for 2 minutes and sauté the shallot.  
Then pour the bell peppers and bacon and set the tem.100 C vel.3 for 5 minutes.
At this point add the cream and leave to cook at tem.100 C vel.2 for 8 minutes.
Take the dough from the fridge and roll out with the appropriate machine for pasta, form noodles.
Put on the heat a pot with water and bring to a boil, add salt and pour the noodles to cook for about 3 minutes.
Drain the noodles in the sauce of bacon and peppers and stir stirring the noodles for about 3 minutes on a low heat; sporzionare the noodles in individual dishes and complete with a sprig of rosemary.
