Features:
Cinnamon is the oldest spice known, as well as one of the most popular for desserts, herbal teas and preparations. It gives intense fragrance and has numerous medicinal properties.
Cinnamon contains vitamins (C and B1), iron, calcium and selenium. In addition, it has antioxidant properties, is a natural treatment for indigestion, heartburn, flatulence and nausea due to its anti-inflammatory and carminative properties. It works by stimulating the production of saliva and gastric juices that protect our digestive system.
Historical background:
Known by Greeks, Romans and Egyptians, cinnamon is among the oldest spices, native to Sri Lanka. It is an evergreen tree of the Lauracee family, we find it also in other countries of the tropical belt such as Malaysia, Madagascar or the Antilles Islands.
Notes:
Several studies are analyzing the effect of cinnamaldehyde and epicatechin present in cinnamon on the stimulation of certain areas of the brain. It is believed that it stimulates brain activity and prevents Alzheimer’s, acts on visual memory, attention, recognition and response speed, especially in older people.
Ingredients for 1 kg of dough
500 g Mix Yeast Cakes Molino dalla Giovanna
380 g milk
10 g honey thousand flowers
10 g low fat yogurt
25 g fresh yeast
10 g butter
60 g gluten-free chocolate chips
20 g lemon or candied orange
cinnamon powder
gluten-free powdered sugar
Proceeding
Place the milk and the crumbled fresh yeast in a planetary or large container, mix until it dissolves.
Proceed with the addition of honey, cinnamon, yogurt and butter, mix everything together for about 5/7 minutes, then add the chocolate chips and candied orange.
Mix to distribute evenly throughout the dough.
Place in a greased and floured pan, put to rise for 1 hour.
When the dough has risen, place it in a preheated static oven at 190 ºC for 40 minutes, then check with a toothpick the dough in the middle that it is dry.
At the end of cooking, remove the bread from the container within a few minutes, place it on a grill and let it cool for a couple of hours before cutting it, serve with a sprinkling of icing sugar
