Ingredients for 1 kg
700 g Golden apples
3 whole eggs
80 g of butter
300 g Mix Bread Revolution
250 g Sugar
200 g of whole milk
3 g of cinnamon powder
1 grated lemon
16 g baking powder without gluten
Fine salt
Icing sugar without glue for dusting
Butter for the mold
Very fine rice flour without glue for the mold
Method
Wash, peel the apples and remove the core. Cut each apple into 8 wedges.
Pour the sugar, the butter, the rum and the teaspoon of cinnamon into a large pan. Melt everything over a moderate flame, add the apples cut into wedges and cook for a few minutes.
Grease and flour with gluten-free rice flour a 22 cm diameter cake tin, arrange the apple slices in the same direction, overlapping them slightly and pour over the cooking liquid.
Prepare the dough
Divide the eggs by placing the egg whites in a bowl and in another the egg yolks, add the sugar to the last and fit well with electric whips.
As soon as the yolks are well cleared then the sugar will be well melted, wash the whips and add a pinch of salt to the egg whites until stiff and whipped until stiff.
Add the mix to the egg yolks, the yeast, the grated lemon rind, the melted butter and start to mix adding the milk a little at a time until you obtain a creamy and homogeneous mixture.
Pour the mixture into the mold, level it and bake in a hot oven at 180 ° for 30/35 minutes, to check that it is cooked insert a toothpick in the center of the cake and make sure it is dry.
After the cooking time, remove the cake from the oven and let it cool for a few minutes before dusting with icing sugar and serve.
