Characteristics:
Spirulina is a blue-green microalgae that grows primarily in saline and alkaline aquatic environments, such as lakes and rivers. Spirulina gets its name from its spiral shape, which is typical of its cellular structure. This algae is particularly prized for its extraordinary nutritional profile. It contains a unique combination of high-quality proteins, vitamins (such as B12 and vitamin A), minerals (such as iron and magnesium), essential fatty acids, and antioxidants that support numerous bodily processes. It is also an excellent source of chlorophyll, a pigment that helps detoxify the body and supports the immune system.
History:
It has been used for centuries as a nutrient-rich food, particularly by the civilizations of Central America and Africa, who consider it a powerful superfood.
Note:
Spirulina is available in various forms, including powder, tablets, and capsules. The choice of form depends on personal preference and lifestyle.

Ingredients for 4 people:
500 g Bologna PGI white-fleshed potatoes
1 egg
6 g spirulina powder
grated zest of 1 organic lemon
230 g Molino dalla Giovanna Special Fresh Pasta
To taste:
Bring a pot of water to a boil, then cook the potatoes until they are tender and soft.
Place the boiled potatoes on a baking sheet lined with parchment paper and dry them in a preheated oven at 170°C (340°F) for 10 minutes.
Remove them from the oven and mash them with a potato ricer, dropping the puree directly into a bowl. Let it cool for a few minutes, then transfer it to a pastry board. Gradually add the egg and the mixture, the lemon, and the spirulina, stirring constantly until absorbed. Then add a pinch of salt and mix everything together.
Shape the dough into a ball; it should be firm but not too dry. Let it rest for 30 minutes.
Take the gnocchi dough, take small pieces, and roll them on a lightly floured surface, creating small sausages.
Using a floured knife, cut them into small pieces and shape them into balls in the palm of your floured hand. Place them on a tray sprinkled with rice flour.
Cook in plenty of boiling water and drain when they rise to the surface, then season with your chosen sauce.
